Thai Spring Rolls with Spicy Peanut Dipping Sauce

Thai Spring Rolls
1 C shredded red cabbage
3/4 C shredded carrots
1 red sweet pepper, thinly sliced
1/2 C bean sprouts
1/2 C chopped cilantro
1/2 C other shredded vegetable, such as zucchini
*combine all ingredients and then place into rice wrappers that have soaked for 30 seconds in warm water.
*wrap carefully and enjoy with the Spicy Peanut Dipping Sauce

Place on the pliable rice wrap and roll up, tucking in the sides.
Finished spring rolls.


Spicy Peanut Dipping Sauce
1/2 C peanut butter
1 T minced garlic
1/4 C soy sauce
1/4 C water
1 T rice vinegar
1 tsp chili paste (or just some fresh chili – to desired spiciness level)
1 tsp sugar
2 T fresh cilantro
*blend all ingredients together in a food processor
*add more or less water depending on desired consistency
